Take a Break – Cook One of My Favorites for the Holidays!

No matter how fast you are moving, it is important to stop and take a break.  Remember, rest is an important part of the creative process!  Realize what is important, be thankful, and spend time with your family.

When I am home for the holidays, I love to cook. This is one of my all-time favorite recipes for the holidays—you have got to try this!

(Tip:  If you have 5-10 great recipes, that is all you need!  My friends and family look forward to this recipe every year.  It is something that I know I can rely on, so there is no need to change it up!)

Corn Soufflé:

1 ¾ lb. cut corn

2 ½ oz. sugar

6 oz. butter

¼ tsp. baking powder

10 oz. heavy cream

5 eggs

1 T. flour

Salt, to taste

Directions:

Heat butter.  Blend in sugar.  Stir in flour.  Gradually stir in heavy cream.  Add eggs.  Blend in baking powder.  Stir in corn.  Bake at 350 degrees for 45 minutes in a greased baking pan.  Done when center is firm.

Yield: 10-12 servings.
